We offer pork by the share, currently ten shares to a carcass, approximately 10 - 14 pounds per share.
Pork is also available by the whole carcass, from 40 pounds to 200 pounds.
We are investigating the option of a 6 month subscription for a whole pig: You would get different cuts each month until you get the entire pig. We think that we would need about 6 -8 people per pig, for the size that we are currently selling of less people if we used a smaller pig.
Smaller pig means smaller cuts(easier to portion control), more tender meat, and less people needed per pig.
Larger pig would result in more weight per cut (i.e. loin would be larger in size and weight) and more flavor. You would have enough to prepare a dish for a party or a large family.
We are also in discussions with a chef to figure a way that we could offer seasoned meats in the CSA-style shares. We could have fresh sausage, seasoned chops or maybe some precooked cuts.
